Recipe: tiramisu

Mmmm... my favourite dessert! Here is the recipe...





Il tiramisù è il più tipico dolce italiano, nonchè il mio dessert preferito... A patto che sia fatto con mascarpone e savoiardi: tutte le varianti che sento ogni tanto da qualcuno sono per me soltanto brutte copie di una ricetta che è perfetta e insuperabile così com'è. Quando lo preparo, vengo colta da veri raptus di golosità... sarei capace di finirne uno intero in un solo giorno, se non avessi imparato a contenermi. (Non foss'altro che fa ingrassare...). Ho dovuto farlo assolutamente in questi giorni perchè era tanto che non lo facevo, e non potevo assolutamente permettere che il 21 dicembre 2012 arrivasse senza che io avessi assaggiato questa delizia per l'ultima vvolta... nel caso che disgraziatamente i Maya avessero ragione.... ;)
Allora, siete pronte? Vi siete procurate il necessario?

3 uova
300 g di zucchero
500 g di mascarpone
400 g di savoiardi
9 tazzine di caffé
1/2 bicchiere di latte parzialmente scremato
cacao amaro per guarnire

Per prima cosa, dividete i tuorli dagli albumi e mettete questi ultimi in frigorifero mentre preparate il caffé. Quando il caffè sarà pronto, versatelo in una ciotola, aggiungete il latte e lasciatelo raffreddare.
Tirate fuori dal frigo gli albumi, aggiungete un pizzico di sale e montateli a neve con una frusta elettrica.
Passate poi a sbattere le uova insieme allo zucchero, aggiungendolo pian piano e alternando zucchero, albumi montati a neve e mascarpone poco alla volta, finchè tutto non sarà ben amalgamato.
Mi raccomando, seguite sempre l'ordine "prima gli albumi e poi i tuorli": se li invertite, badate che le fruste siano perfettamente pulite e asciutte quando montate gli albumi a neve!
Adesso abbiamo la nostra crema al mascarpone. Una volta preparato il dolce, è obbligatorio pulire la ciotola dalla crema rimasta con le dita... mi raccomando! ;)

So, are you ready? Have you procured the necessary?

3 eggs
300 g of sugar
500 g of mascarpone
400 g of sponge fingers
9 cups of italian coffee
1/2 cup low-fat milk
cocoa powder to garnish

For first, divide the egg yolks from the whites and put them in the refrigerator while you prepare the coffee. When the coffee is ready, pour it into a bowl, add the milk and let it cool.
Take out of the fridge the egg whites, add a pinch of salt and whipped whites with an electric mixer.
Then move to beat the eggs with the sugar, adding it slowly and alternating sugar, egg whites and mascarpone little at a time, until all is well blended.
I recommend you always follow the order "before the egg yolks and then whites" reversed them, see that the hoses are clean and dry when the egg whites until stiff!
Now we've got our mascarpone cream. Once prepared the cake, you must clean the bowl from the remaining cream with your fingers ... I recommend! ;)

A questo punto, c'è la parte più divertente: dobbiamo pasticciare con le mani. Immergete i savoiardi ad uno ad uno nel caffè, girandoli prima da un lato e poi dall'altro. Quando sono inzuppati (solo l'esperienza vi farà capire quando è il momento di tirarli fuori, perciò.... provate!), tirateli fuori e disponeteli in fila all'interno di una pirofila. 
Formate uno strato compatto, stringendo un po' i biscotti bagnati e colmando gli eventuali vuoti con biscotti spezzati. Stendete uno strato abbondante di crema al mascarpone, livellandola con una spatola. Formate un altro strato di savoiardi e uno di crema al mascarpone. Livellate e mettete in frigorifero per qualche ora (almeno 4 o 5). Al momento di servire, cospargete con cacao amaro... e.........

Form another layer of ladyfingers and mascarpone cream. Level again and put in the fridge for a few hours (at least 4 or 5). Just before serving, sprinkle with cocoa powder ... and .........
